Sunchoke Soup

• 10oz (300gr) sunchokes, Jerusalem artichokes,  5 or 6 medium
• 1 1/2 cups rooster broth
• 1 tbs Truffle Oil to complete

• Peel sunchokes, reduce into chunks and instantly put into rooster broth.
• Cowl, deliver to a boil, and simmer till tender, about quarter-hour.
• Purée in blender or use an immersion blender.
• Ladle into soup plates, garnish with truffle oil and serve.

Notes

Substitute any flavored olive oil – or simply olive oil, for the Truffle Oil.
Sunchokes discolor quick so put them within the broth as quickly as they’re reduce.
